1. What was the most memorable or exciting part of your holiday?

I got to learn a lot about nutrition and benefits from plant-based foods such as nuts, legumes and grains. Cooking our first meal by ourselves on the last day of the holiday was exciting, we got into a real rhythm and worked well as a team. Having eaten so well for the week I am inspired to keep it up for life.

2. What tips would you give other travellers booking this holiday?

Come with an open mind, try not to talk too much amongst yourselves during demonstrations or you will miss steps in the recipes and cooking. Write notes at the end of each day of any recipes you really enjoyed and want to recreate.

3. Did you feel that your holiday benefited local people, reduced environmental impacts or supported conservation?

I ate lots of local produce most of which was organic. Also, I bought products from local trades people in the markets and craft shops which were not mass produced but handmade. We also visited local cafes and restaurants.

4. Finally, how would you rate your holiday overall?

I loved comfort and country house feel of the accommodation which was like home from home with nice touches like piles of books to read and when it got cold in the night, we got extra duvets and blankets. I also loved our trips to the beach on days when the weather was fine, we’d pile into a couple of cars with beach chairs and blankets to relax on the beach. I got to meet people from other countries and enjoyed discussing our differences as well as things we had in common.

1. What was the most memorable or exciting part of your holiday?

The week started with a walk around the market, after being given some euros to
spend - it was tiring but fun and great to see fruit and veg without the usual
plastic wrapping. Our first day cooking was with the wonderful Gony which was
hands-on, learning delicious new vegetarian recipes and finishing with a lunch of what we had cooked including Briam, beans with spinach and lots more. Our next 2 days were with the equally wonderful Christina, for another hands-on cooking experience, learning more vegetarian/vegan recipes, including aubergine dip, Giants and more and eating together again, tasting our delicious food. We had 1 day cooking pies and other dishes that we had chosen with the wonderful Fiona.
On our final day, Fiona asked us to choose and cook dishes with heart, brain, gut and cancer preventative ingredients, which was daunting but we produced some excellent dishes. We had a free day, and other free time where Fiona and Dimitris took us to the beach and we often ate out in the evening. I am not vegan or vegetarian but enjoyed this vegetarian nutritional cooking holiday and all of the dishes and enjoyed learning about food nutrition from Fiona who is very knowledgeable and had great advice. I stayed in one of the apartments in Gialova and the apartment was clean (although there was no housekeeping during the weeks stay, in case this is important to you), and air conditioned with a comfy bed. Unfortunately, the water was regularly cut off by the Greek water board/council which was inconvenient, and we also had half a day where we had no electricity. If you would like to learn about food nutrition/medicinal qualities, I would recommend this holiday.

Responsible Travel

As the pioneers of responsible tourism, we've screened this (and every) holiday so that you can travel knowing we've worked to maximise the benefits of your holiday to local people and places, and minimise any negative impacts.

Planet

In every way we try to sustain our local environment. We re-use, recycle and compost everything possible, including the mountain of olive branches generated each harvest rather than burning them. By doing this, we've developed novel and durable solutions to problems such as soil erosion and summer drought. Our olive grove and vegetable gardens are completely organic.

Gialova lagoon is a Natura 2000 protected area. It is the only European habitat of the African Chameleon and a haven for migratory birds. Further up the coast is the biggest nesting site in Europe for sea turtles. We are involved with and support all efforts to protect the habitats of these endangered creatures. We are the local on-call number if a turtle gets into trouble in Navarino Bay. Sometimes the proximity of really wild life shocks our guests, such as the jackals who pass by noisily most evenings, sounding like a group of drunken revellers and the wild pigs who love to ransack vegetables - particularly tomatoes !

We encourage our guests to understand that plastic often finds its way to the sea and beaches, causing havoc for both turtles and chameleons, and to set an example to others by always using a reuseable cup for takeaway drinks. We provide cups, water bottles and filtered water.

People

Our aim is to facilitate local people in sharing the incredible wealth of knowledge they possess – in teaching, collaborating and giving our guests and students insight into a world they would never have access to as normal tourists – and to be paid a decent wage for their time. ( Particularly when foraging, it's important to know what to pick, where to pick and how to prepare certain foods.) All of the produce we buy is sourced from small local, organic growers, many of whom you will meet.

We are very active in fundraising for refugees in Greece and are currently trying to arrange a cross cultural cooking workshop with Syrian Refugees at Eleonas camp. Olive oil is the staple food here and every year we donate at least 10% of our oil ( organic, cold pressed, extra virgin ) to families in need . Last year one of the recipients were was a refugee family in a camp in Athens who have now been granted asylum in Germany and have said they will be eternally grateful for enabling them to feed their kids the best oil every morning at breakfast. ) We supported Iannoula for several years - a single mother with 5 boys. We helped to enable her to keep the children in school. They lived in a tent on the perimeter of Kalamata airport and lost everything they owned in the floods of Sept 2016.

We are constantly fundraising for 2 local animal shelters ; Zoe, our local dentist and total hero cares for 87 stray cats on her own and provides for all their medical needs. ( Sterilisation is expensive in Greece. ) Katerina and Andreas, unbelievably, care for over 350 stray dogs. The current economic crisis in Greece has further exacerbated the problem of strays.

In the UK we donate both money and time to Centrepoint and Crisis in London. We also donate to Greenpeace on a monthly basis.
